My new favorite cookbook! I have been cooking from Richa's blog and her previous cookbook and loving everything I have made from them for a long time, so knew I would love this cookbook too. It is absolutely beautiful, with gorgeous pictures for nearly every recipe. While Richa's previous book features all Indian food, this book has additional Indian flavors but also includes all kinds of other ethnicities - American, Chinese, Ethiopian, Italian - you name it. Richa made this book friendly to everyone, as there is a gluten-free option for almost every recipe, as well as soy-free, nut-free, and of course everything is dairy-egg-and-meat-free, so friendly to the animals as well :) Amazingly, when I have tried the recipes both ways (for example there is a White Garlic Sauce and also a Nut-Free White Garlic Sauce), I have found the alternate recipes to be just as amazing as the originals. The ingredients are easy to find, and the recipes are surprisingly quick and easy. I have made numerous recipes from the book already, and every one is full of amazing flavors and textures, while also being very healthy! Some of my favorite recipes so far:Mushroom-Jalapeno White Pizza (pictured below) - my picky husband seriously said "you can't get a better pizza than this"Hoisin Mushroom and Tofu Stir-Fry (pictured below) - I love this peanut butter based hoisin sauce - so much better than the store-bought stuffOne-Hour Cinnamon Rolls (pictured below) - so tender and delicious - and easy!Spinach-Artichoke Lasagna with Cauliflower Alfredo - OMG, hands down the best lasagna I have every had. Made this for omnivore company and they went crazy for it - you will absolutely not miss the cheese at allAlmond Butter Cheesecake Brownie Bars - OK, how does the cheesecake part taste exactly like cheesecake when it's basically just non-dairy yogurt and almond butter? Magic!Almond Butter Snickerdoodles - this one is also on the blog and it is my go-to cookie recipeSmoky Mac Bake - a perfect comfort food one-dish mealTikka Masala Chickpeas (pictured below) - this sauce was SOOO creamy and incredibleI cannot recommend this book highly enough - it's the kind of book that you will flip through and want to make every single recipe. And from my experience, none of them will disappoint!

This cookbook is amazing. It has some of the same Indian flavors that Richa had in her first book, but goes so far beyond that. One of my favorite things about the recipes is how flexible they are. You are given choices of veggies to use so you can easily go with whatever you have on hand. If you love following recipes, they are detailed enough that everything will come out perfect, but if you are the kind of cook who likes to take inspiration from a recipe and then run with it, this book is great for you too.I think the first thing I made was the 1 hour cinnamon rolls. They are so good and so easy. She includes a two rise method for when you have more time, but the one hour version comes out perfect. The lemon, chia, coconut muffins are a favorite as well. Well, they are my son's favorite but since he eats them all I hardly ever get one. :)For main dishes, the smoky mac bake and the deep dish pizza are fantastic. I don't usually like deep dish pizza because I find them too heavy, but this one is perfect. The vegetable lasagna is great, and I can't wait to make it again. I didn't think it would all fit in a 9x9 pan, but it was perfect and I'm glad I trusted the recipe.Do yourself a huge favor and make her peanut butter sauce. As she says in her intro, there are a million peanut butter sauces out there, but this one is special. I have put it on noodles, in fried rice, with chickpeas. I would eat it on cardboard. Seriously. It's amazing.And finally, let's talk about desserts. Two words. Tiramisu fudge. I mean, if that doesn't have you ordering the book, I'm not sure what's going to work. Seriously. My god that stuff was good. It was lie to my kids and say it was gone and then eat the rest while they were at school good. I am in serious trouble when they get old enough to read amazon reviews.I know there are a ton of cookbooks out there, but this one is really special. The hardest part is deciding what to make next.

I loved - LOVED - Richa's first book, Vegan Richa's Indian Kitchen, so I was really excited when I finally had my hands on her new book (downloaded the Kindle version as soon as it was available!). I was not sorry. In fact, I might even like this one better than her first, and that's saying something because I have yet to make a recipe from VRIK or her blog that I haven't enjoyed cooking and eating. Since getting this cookbook, most of my meals have been from its recipes, at least in part. So far I have made:Chickpeas in Peanut Butter Sauce (this makes good leftovers for work lunches)Teriyaki Lentil Balls (I tossed these in with some veggies and noodles for a stir fry)Orange Sauce (this stuff is legit, I used it on sugar snap peas and tempeh)Kung Pao Sauce (also legit and SO GOOD with the lentil balls from the teriyaki lentil ball recipe)Chickpeas and Potatoes in Spinach Curry Sauce (also froze an extra batch of the sauce because it's that good)Firecracker Jackfruit SandwichesAlmond Sriracha SauceTurmeric Lentil Fritters Bowl (I also used some almond sriracha sauce on this)One Bowl Apple Banana BreadI will be making more recipes from this book, and I will also give this book as a gift to others. Richa Hingle makes Indian and other regional dishes accessible to those with limited time and limited funds - most of the recipes use things like beans, lentils, and other things that can be bought from the bulk bins, and she also includes recipes to make your own garam masala, etc. If you want to expand your palate, give this a try.
